Grace Purple Stew




  1. Squeeze lime over potatoes. Drain off excess lime juice.
  2. Boil potatoes in water until soft
  3. Combine coconut milk, tomato, carrots, scallion, onion, garlic, pepper, thyme, pimento and soy sauce in a sauce pan 
  4. Cook pan at a medium to high heat
  5. Add potatoes once soft and mix in with pan
  6. Add salt to taste
